LAZY DAVE'S RECIPES

• BEER BATTER FRIED CATFISH •
1-1/2lb. catfish fillets,cut into strips.
1 C flour
1 tsp.baking powder
1 tsp. salt
1 Tbsp. cooking oil
1 C flat beer
1/2 tsp peanut oil in a skillet

Sift and blend the flour.baking powder and salt in a bowl.Mix the tablespoon cooking oil, beer and tabasco sauce and add to the flour mixture,stirring untill smooth.Chill the batter.
Heat the peanut oil to 375 degrees.Dip the cold strips of fish in the cold batter and cook in the hot oil for about 4 minutes. keep each batch of fried fish warm in a 200 degree oven.
while the next batch is cooking.Allow the oil to return to375 degrees before cooking more fish,
Serve with coctail or tartar serves 4


• CATFISH GUMBO •
2 Tbsp.vegetable oil
1 C. chopped onion
1 C. chopped green pepper
1 C. sliced celery
4 slices boiled hamm,cut into 1 inch squares
1 tsp.minced garlic
1 lb. catfish fillets,cut into 1 inch chunks.
1 (16 oz) can tomatoes, cut up
2-1/2 C.water
1 C. sliced okra
3/4 C. 5-minute rice
2 chicen boullion cubes
Hot pepper sauce (tabasco is fine)
Heat oil in a 3-1/2 quart saucepan over high heat.Add onion,green pepper, celery,ham,garlic.
Stir to mix. Cover,cook for 3 minutes,stirring once.Add remaining ingredients except hot pepper sauce.
Cover and cook over high heat 6 to 7 minutes,or until fish is barely opaque in the center.Remove from heat;Let stand covered for 3 minutes until rice is tender. Stir in hot pepper sauce to taste. Makes 4 serving.


• GEORGE'S CATFISH FILLETS WITH SESAME CRUST •
1/2 C.extra-virgin olive oil
1/2 C.white wine vinegar
1 Tbsp.honey
2 tsp.finely grated lemon zest
Juice of 1/2 lemon
2 garlic cloves,minced
1 1/2 pounds catfish fillets
1/4 C. sesame seeds
Make marinade by combining olive oil,vinegar,honey,lemon juice and garlic. Stir well.
Wash the catfish fillets and pat dry. Add the catfish to the marinade, turning several times to coat well. Cover and refrigerate for 2 to 6 hours. Let fillets stand at room temperature for 30 minutes before grilling. Drain from marinade and coat both sides of fish with sesams seeds.
Place fish on grill and cook for 4 to 5 minutes or until whitih in the center.
Serves 4

• FRIED CATFISH •

1/4 tsp Garlic powder
3/4 C.Yellow Cornmeal
4 Catfish fillets or whole catfish
1/4 C. Flour
2 tsp Salt
Vegetable oil
1 tsp Cayenne pepper

Combine cornmeal,flour,salt,cayenne and garlic powder.Coat catfish with mixture, shaking off excess. Add 1" layer of oil to large skillet. Heat to 350 degrees.
Add catfish in single layer and fry until golden brown, about 5 to 6 minutes depending on size.Remove and drain on paper towels.

• SMOKED CATFISH •
season catfish fillets with creole seeasoning. Cook on a hot grill, that has been sprayed with no stick cooking spray,until the fish are firm and flakes easily with a fork.
Serve with Cocktail sauce or horseradish sauce.

• HUSHPUPPIES •
1/2 C.flour
2 tsp Baking powder
1 Tbsp sugar
1/2 tsp salt
2 C.corn meal
1 small onion,finely chopped
1 beaten egg
3/4 C. milk

Sift together dry ingredients.Add onion,Add beaten egg and milk to dry ingredients,stirring lightly. Drop a tablespoon of batter into hot deep fat,Frying only a few at a time until golden brown. Drain on paper towels.


• COCKTAIL SAUCE•
Mix together the following..
1 C. ketchup
1/4 C. freshly squeezed lemon juice
1 tsp horseradish
1/4 tso black pepper
Refrigerate until ready to use



• PARMESAN CATFISH•
1/2 cup parmesan cheese,grated
1/2 tsp pepper
2lbs catfish,skinless and boneless
1/4 cup flour
1 tsp paprika
2 Tbst margarine,mealted
Combine parmesan cheese,flour and seasonings in a bag. Place catfish in a bag and shake to coat with cheese mixture. Place in baking dish.Pour remaining cheese mixture onto fish. Pour margarine over catfish and bake at 400 untill golden brown and fisk flakes when tested with a fork,approximately 15-20 Minutes, Serve with corn bread and melon...For 8

• FIERY CATFISH WITH YOGURT•
1-1/2 lb,skinless cat fillets
2 Tbsp,olive oil
1 medium onion,thinly sliced
2-3 jalapeno peppers,stemmed, seeded andminced
2 Tbsp, minced fresh ginger
1 tsp,minced or pressed garlic
1 tsp,ground coriander
1/2 cup plain yogurt
1/4 cup sliced almonds
1/4 cup raisins
Peheat oven to 450 F,Rinse catfish and pat dry.With a sharp knife trim white or grayish fat from skin side and edges of each fillet. Lay fish in shallow baking pan. overlapping thin sections.Brush with 1 Tbsp, oil.In a large frying pan,heat remaining oil and cook onion,peppers,ginger,and garlic until onion is limp,4-5 minutes:stir in coriander. Sprinkle onion mixture evenly over fish and bake,uncovered,until fish opaque throgh center,10-12 minutes.Garnish with yogurt, almonds, raisins, serves 4
