• GEORGE'S CATFISH FILLETS WITH SESAME CRUST •

1/2 C.extra-virgin olive oil
1/2 C.white wine vinegar
1 Tbsp.honey
2 tsp.finely grated lemon zest
Juice of 1/2 lemon
2 garlic cloves,minced
1 1/2 pounds catfish fillets
1/4 C. sesame seeds

Make marinade by combining olive oil,vinegar,honey,lemon juice and garlic. Stir well.
Wash the catfish fillets and pat dry. Add the catfish to the marinade, turning several times to coat well. Cover and refrigerate for 2 to 6 hours. Let fillets stand at room temperature for 30 minutes before grilling. Drain from marinade and coat both sides of fish with sesams seeds.
Place fish on grill and cook for 4 to 5 minutes or until whitih in the center.
